The vital organs (i.e. brain) as well as muscle uses glucose for fuel and, during times of stress, the body has higher need for glucose. When glucose is not available from food, the body creates its own through a process called gluconeogenesis, which is stimulated by cortisol. Cortisol is a potent stimulus for increased blood sugar, causing an increase in insulin regardless of what someone is eating.
